Maybe you need to be a bit more specific. Do you want a woven, felt, knit? What type of wool are you after, mohair, cashmere, scottish etc? Then it will be a lot easier to help you! Good luck with the pants!

Yes it really depends on the aesthetic.
If you're more on the side of the wabi-sabi, use anything natural (as blend of course, as you appear to be interested in wool) that's rigid and dry. Linen, hemp, raw silk, canvas and cotton would be nice with natural dye where things get better with age (as the form of decolorization/decaying)
And of course, it would be better to touch and feel the fabric in person.
