    no cheese...Its not so much about the recipe as the process for me.

    You have to find some really good sweet potatoes. I find that the ones that are medium in color work the best for flavor. Too dark or too light and the flavor is bland. I either steam or bake them until very soft, then peel them while still hot. Then, with a masher or fork, not with a mixer I mash them with a bit a freshly cracked sea salt and butter, nothing else. They mix best when they are still hot. Dont use a mixer, it changes the composition of the potato and makes them too starchy. But the right ratio of butter to potato enhances their sweetness.

      Would a ricer work? I've been itching to use my ricer on something other than potatoes or tofu. Super thanks for the suggestion.

        I am not sure how a ricer would be with sweet potatoes. They are a bit more fibrous than other potatoes. The stringy part would make it more difficult. I also think that would change the texture and break down the potato too much. It wont be fluffy like they should be...

        I am old school though, when it comes to certain things like this. For mashed potatoes, I believe in mashing.

            pretty awesome that padma spit it out anyways.

            I feel like mascarpone would make the potatoes really stodgy. Go for Kira's advice. You should make some roasted beetroot too. I can never have enough

                      me too! I never could fold them without having them end up in this insanely large mess. She gave a demo on one show and now my sheet stacks are nice and neat, or at least better than they used to be.

                              They were pretty dope, I really loved the outfit of the Gunman, i found it very number nine'ish, at least this winter season. The movie is just great!
