I prefer goose fat to duck fat, the flavour is awesome and it has similar nutritional qualities to olive oil, so it's actually healthy.

I used to do potatoes with goose fat and fresh chopped parsley when I was living in Paris...soooo good
That reminds me I need to find some tripoux, best offal dish ever. It's imposible to find in spain.

Oh man, that sounds so good right now. Goose liver and fat > duck liver and fat. Though I'll take either. Such a fatty.

Was just visiting this thread and wondering, why I didn't post here yet.
I love food... I am living in the part of Germany which has the best restaurants, and I really love to discover all the different kitchen styles - from classic french cuisine to that modern molecular stuff.
Don't misunderstand me, I am not going out for lunch that often (but when I do, I go to a good restaurant... rather one time good than plural times at average quality).

But I cook nearly every day at home... and in my holidays, I enjoy arranging a bigger menu. To get some idea of it - these are some pics of the last menu (some time back in 2008).

What about taking several times... I hate those overfilled plates.

Just purchased some beef filet, vacuumized. I am going to cook it at low temperature (55°C or so) over several hours (about 5hrs) and then roast it.
The result is hopefully going to be most delicate beef.
But don't ask me yet what else I am going to prepare beside the beef...

this reminds me of a neighborhood joint near my place that serves up french fries cooked in duck fat. heavenly.

a healthier thing is using the duck fat for warm lentil salad....which is what i just did for lunch. so good!

I'd say check out Noma, formel B, Geranium and Prins Ferdinand. Expensive though.

Just had some self-made pizza...
paprika olives jalapenos
spinache gorgonzola

We got a pizza stone which heats up up to 300°C... Therefore pizza is finished within a minute or so and very crunchy.

Was awesome... I cooked the beef (vacuumized) in water at 80°C for 3 1/2 hours and then fried it in butter & sunflower oil. It almost melted on the tongue...
