          Although the French Laundry cookbook is food porn at its best, I've yet to make a dish from that book. My go-to cookbook that is entertaining to read and also actually useful is Bourdain's Les Halles cookbook. The photos aren't incredible, but the dishes are tasty and straightforward.

          The Alinea cookbook is another beautiful read but as expected, not really all that useful for home cooking.

            There are many cookbooks from the last decade that are very useful for the home cook. Generally, though, you need to put in the effort to achieve superlative results. Some of these books are easier to use than others, but they all contain recipes that are good to stunning.
            All around:
            Zuni Cafe Cookbook - Rodgers
            Sunday Suppers at Lucques - Goin
            Ad Hoc at Home - Keller
            The Big Sur Bakery Cookbook
            Earth to Table - Crump
            Seven Fires

            Italian:
            Made in Italy - Locatelli
            Urban Italian - Carmellini
            A16
            The Geometry of Pasta
            A bunch of the Batali books are useful

            Asian:
            Washoku
            At the Vietnamese Table
            Cradle of Flavour - Oseland

            There are many others I could recommend, don't hesitate to ask.

                i'm roasting a chicken.

                do i cover it with some tin foil to prevent drying the skin or it's not necessary?

                    rub the whole bird down with vegetable oil before you put it in the oven (at a high temperature). you do want the skin to dry, so that it crisps up. but with the oil there as a protective layer, the skin will fry rather than dry.

                    also, truss the bird before roasting.

                      the new ferran adria book "the family meal" is amazing for its recipes and photos, and i'll always love the chez pannise menus book, and her newer "the art of simple food" for cooking from, but no pics in either...

                            Thai Food by David Thompson is a beautiful book that is worth reading even if you don't make the recipes.

                            Sichuan Cookery by Fuchsia Dunlop

                            The Flavor Thesaurus by Niki Segnit is interesting and inspires experimentation

                            I have to recommend 50 Great Curries of India by Camellia Panjabi because it is the only recipe book I have made every recipe in.

                            The Raw Gourmet by Nomi Shannon has nice pictures and some nice food for hot days. Adding bacon to almost any recipe makes it awesome.

                              vegan completely for you ;)
                              on the left is like a soy/mirin braised asparagus+onion
                              the purple squiggle is satsumaimo, so just a roasted japanese sweet potato (look out for these, AMAZING flavor, sometimes I just roast a huge one and eat that with miso for a meal, coating each piece with roasted black sesame seeds, scallions, and soy sauce is also great)
                              finally, the atomic yellow stuff taquan or radish oshinko, a sweet pickled daikon

                              so just a handful of super simple stuff in complementary sweet and salt flavors my grandma would kill me if she saw me eating brown rice though
