Just to clarify, in no way am I a defender of Balthazar bread (the aforementioned loaf came with me all the way from San Francisco's ACME bakery). I think they should be ashamed of their croissants. So far the best bread I have found in New York has been from Eataly. Expensive, but worth it. the only good thing at balthazar bakery is the pistachio donut.
dominique ansel has become my favorite bakery by far, its the one i know of where you can actually watch them (including dominique himself) craft their pastries. if you are there when they open at 8am the pastry is usually still hot. plus the outdoor space in the back is super nice.
but for plain croissants, ceci cela is still my favorite. la bergamote is also good if you happen to be in chelsea.

La Bergamote is fine, but still not flaky enough. I have to checkout the one you are talking about.
