The upside as far as CO2e emissions and water really would be tremendous, and my understanding is cricket flour contains the most protein pound for pound of any food source. Definitely sent back from the future but it might be a better one if we stopped using 30% of the Earth's surface for livestock -- I kinda like it.
Then again you don't see me eating cricket flour very often.
