To be honest I can't be bothered thinking of all the great movies I've seen with use of scoring. Probably Le Samourai comes to mind first, and Rammstein in Lost Highway was surprisingly amazing even though you could hardly describe it to somebody who hasn't seen it.
I'd have to second Lawrence of Arabia, a modern classic. Kung Fu Hustle, the ax fight scene, basically a musical song and dance number with Asian gangsters.
Platoon stands out for me, the use of Adagio for Strings with the tragic final slow-mo battle is just beautiful, even if the impact of the piece is greatly diminished by hearing it so many times before (even at the introduction, when completely inappropriate).
