I know that this can't be answered generally, as BBS cuts of the same model vary from season to season. But which of his pants models could be rather recommended for muscular legs? In terms of not being too slim in the thigh and calf, but not a loose cut either.
P13 should be way better than P11, but afaik his P13 cuts got slimmer from season to season. Any other recommendations?

Get the P13R, which is regular. There are now separate S (slim) and T (tight) cuts. P11s and 12s will be too tight for thunder thighs imho. P14s should be a bit looser on the thigh if you size up.

that is a hook-and-eye closure

though, i do somewhat prefer the archaic crotchet and loop

edit: hook and eye clasp, which i see you've already hit upon, is perfectly correct.
