    Wagyu is the breed, that's correct, but the way it is raised is hugely important. Much is raised correctly outside japan, though it doesn't seem to approach the real thing (I think it's raised better than some but not right), much isn't. There was a fairly significant uproar a few years back about calfs shipped to california and raised in california being shipped back to kobe to be slaughtered there and legally labeled Kobe beef. There are plenty of dishonest people who will sell Wagyu as Kobe beef. I'm sure some of it is excellent, some of it (Harris Ranch again comes to mind) is nothing special. I completely believe that real Kobe beef is available outside japan.</p>

    Regarding cooking style, I've not had beef in Kobe, but I've had Kobe beef in Japan. It was grilled, but over lower heat for longer. I think because the marbling means the fat needs to get a little meltier, so the normal method of hot searing doesn't work so well. Perhaps in Kobe itself they steam it, but that's certainly not a Japan-wide thingl

    A lot of the nicer supermarkets around here (it's Texas... they love their meat... go figure) now carry Wagyu steaks. Damn they look good hehehe.</p>

    I'm quite sure you can score the real deal in NY no problem. In Boston the only place that I can confirm serves you true Kobe would be Oishii in the South End. My meal there was probably the most decadent in my life. O-Toro until you're sick of it.</p>

            theaddict, i'm usually a total purist about food (a la Alice Waters), but it was an amazing dish...the coconut and coffee actually highlighted the delicate taste of the meat without compromising it. i highly recommend.</p>

              Listen to Laika, Wd-50 has some seriously amazing dishes and ingredient combinations that will blow your mind. Not to mention equally awesome drinks.</p>

                  hello all,

                  i need a bit of your help in choosing restaurants in paris. it's my first time, and i've got a preliminary list, but out of the 4 i chose, i can only have 3 meals. onwhichrestaurant listedshould i pass?

                  1. ledoyen
                  2.les elysees
                  3. l'astrance
                  4. l'atelier de joel robuchon (is the table de robuchon any better? or should i just go to atelier? not THE Atelier, but an atelier nonetheless)
                  l'eclaireur (jk about eating here, but i will stop byfor sure!)

                  i'll be dining at some of these for lunch, as well as a few bistros. ican't affordall these fordinner, cause i have a feeling i'm going to make some "recent purchases" from l'eclaireur. any restaurants that would be better substitutes for the price? i can't afford l'arpege, alain ducasse, or guy savoy, which are a step above (i've read 4-500 per person minimum?). i'm going with a fairly large group, about 8 or so. we eat pretty much anything, except i'm allergic to nuts.


                  also, restaurants in Barcelona? i'll be there in 4 weeks. doesn't have to be super high end. i can't make it to El Bulli or those kinda places. just lookng for good food, preferrably no more than 60 a person. i'll definitely be getting some joselito ham for lunch.

                    i think the reason for this is because you reallyruin the kobe steak if you grill it too much, beyond medium-rare. one chef likened Kobe more like to foie gras, though not in texture or taste, but in its delicacy and fatiness.

                    i've heard the matzusaka beef is better for grilling. not necessarily because it's superior, but because of the beefier tastewhich is more preferable whengrilling.regardless, one shouldn't overcook either matzusaka or kobe beef. both have a lot of marbling,and the difference between them is said to beminiscule (i haven't tried matzusaka beef...i don't even think it's available stateside?). but matzusaka beef issupposed to have a beefier flavor, because despite itsmarbling,the beefy flavoris morepronounced than kobe beef, which tastes fattier.i think the high end kobebeef can sometimes betoo marbled to grill. on the spectrum up to a12, i think a5 kobe isby conventionaccepted as the most marbled grade while still being able to be prepared as a steak. the super marbled kobe like grade a10 is usually used for shabu shabu i think. there are places that do grill kobe beef in kobe i think, but i think it's popular to prepare it as shabu shabu as well.

                    in short, i think some people do grille kobe beef. but because of its texture, it's preferable not to cook it too much. also, matzusaka beef is said to be a choicer meat for grilling, though again not to be overcooked.

                      johnny, not sure if you're still in paris, but i've heard great things about (and am going to) Royal Madeleine bistro, Chez L'Ami Jean bistro, and Chez Michel. i think they're all aroudn the 30-35euro mark. pierre gagniere is way more. i can't swing it...

                          As if I didn't need another reason to go straight to Alinea asap... this further cements it. I've been looking at all the gastroporn photos from people's experiences there on eGullet for years...</p>

                            @ theetruscan: Thank you for posting that! It's really amazing to me that NYC has never been able to sustain (or even introduce) a first tier avantgarde restaurant. WD-50 and Tailor are nowhere near where Alinea appears to be, in both conception and execution. Liebrandt's Atlas probably came closest (before promptly folding) but most of the food there was IMHO ultimately silly, and the quality of experience markedly lower. The ambition of conceptualization at Alinea appears to be completely unmatched in the rest of the US, where avantgarde cuisine is generally relegated to a kind of apologetic casual formality which always stops one (or more) steps short of shooting for an "ultimate" dining experience.</p>

                                Avant garde restaurants are great but do they keep you awake with cravings the way that the Swedish Meatballs and gravy from Ikea do?
